    An easy, cheap, comforting soup that always makes me think of my mum's.

    Ingredients
    Serves: 8 

    • 15 potatoes, sliced
    • 3 onions, chopped
    • 4 large carrots, grated
    • 3L stock
    • salt and pepper to taste
    • handful chopped fresh parsley

    Method
    Prep:30min  ›  Cook:2hr  ›  Ready in:2hr30min 

    1. In a large stock pot, combine the potatoes, onions, carrots and stock. Bring to the boil. Cover, reduce heat and simmer for 2 hours. Add salt and pepper to taste. Add parsley just before serving.

    Cook's note

    For a lighter soup, use chicken stock. For a richer soup, try beef, lamb or even veal stock.

    Something else. I just cooked the veggies until they were soft- that was about 20 minutes, not 2 hours.  -  14 Nov 2010

    Altered ingredient amounts. I added 2 bay leaves at the beginning instead of parsley at the end.  -  02 Dec 2009
