About this recipe: Also known as cranachan, this easy pud is perfect for Burns Night - or any night, really!

Serves: 4 

  • 1 pot whipping cream
  • 50g oatmeal, toasted
  • caster sugar to taste
  • 1 tablespoon rum or vanilla
  • fresh seasonal berries

  1. Toast the oats in a dry frying pan over medium heat, stirring so it doesn't burn. Remove from the heat and set aside to cool.
  2. Beat the whipping cream till stiff. Add the oats a handful at a time till desired consistency is reached. There shouldn't be too many oats - make sure it's still light and creamy.
  3. Add caster sugar to taste, along with rum or vanilla.
  4. Add some fresh berries and gently fold into the cream mixture. Serve straightaway.
