Spicy winter vegetable soup

    A delicious vegetarian soup, which is perfect for the cold winter months. It's a smooth pureed soup, made with root vegetables and seasoned with cayenne pepper and herbs.

    Serves: 4 - 6

    • 1 parsnip, peeled and cut into large chunks
    • 2 carrots, peeled and cut into large chunks
    • 1 sweet potato, peeled and cut into large chunks
    • 1/2 turnip, peeled and cut into large chunks
    • 2 cubes vegetable stock
    • 1 medium onion, finely chopped
    • 3 cloves garlic
    • 100ml double cream
    • olive oil
    • cayenne pepper to taste
    • freshly ground black pepper to taste
    • dried mixed herbs to taste
    • chilli powder to taste

    1. Bring a large pot of salted water to the boil. Add 1 teaspoon oil, parsnip, carrots, sweet potato and turnip. Boil until fork tender. Drain and set aside.
    2. In the same pot, bring 600ml water to the boil with stock cubes. Add cayenne, black pepper, herbs and chilli powder.
    3. Meanwhile, fry onions and garlic in oil until soft and golden.
    4. Add onions and drained vegetables to the stock pot and simmer for 10 minutes.
    5. Remove from heat. Blend soup with a hand blender until smooth. Add double cream and stir through.
