Peel and roughly chop all veg. Lay in a roasting tray, pour a little olive oil over and add herbs and seasoning, mix together with your hands.
Lay on top of the veg mix your chicken/pork or whatever meat your roasting, and cook as per meat instructions. If your not cooking a roast joint, put tray in the oven on 200 C for about an hour (until veg has roasted up nicely).
Take tray out of oven and transfer to hob, add a little hot water and stir (to release juices off bottom of pan).
Mash the veggies with a masher and sprinkle over some plain flour while keeping it on the heat to thicken it.
Take tray off heat and sieve all of the veggies over a pan. This should leave you with a veggie pulp and a pan of delicious gravy. We always use the leftover pulp together with the chicken carcass to make a soup for the next day - nothing is wasted! Enjoy!
