About this recipe: This vegetable gravy is soooooo easy to make it's not even funny but its the best damn gravy I have ever made!

Serves: 4 

  • 1 sweet potato
  • 1 onion
  • 2 cloves of garlic (more or less if you prefer)
  • 1 courgette
  • 1 carrot
  • bay leaf
  • sage
  • salt and pepper
  • olive oil
  • sprinkling of plain flour
  • hot bolied water

Prep:10min  ›  Cook:1hr  ›  Extra time:50min  ›  Ready in:2hr 

  1. Peel and roughly chop all veg. Lay in a roasting tray, pour a little olive oil over and add herbs and seasoning, mix together with your hands.
  2. Lay on top of the veg mix your chicken/pork or whatever meat your roasting, and cook as per meat instructions. If your not cooking a roast joint, put tray in the oven on 200 C for about an hour (until veg has roasted up nicely).
  3. Take tray out of oven and transfer to hob, add a little hot water and stir (to release juices off bottom of pan).
  4. Mash the veggies with a masher and sprinkle over some plain flour while keeping it on the heat to thicken it.
  5. Take tray off heat and sieve all of the veggies over a pan. This should leave you with a veggie pulp and a pan of delicious gravy. We always use the leftover pulp together with the chicken carcass to make a soup for the next day - nothing is wasted! Enjoy!
