    There's no simpler way to relish rhubarb season. This rhubarb crumble is an irresistible childhood favourite.

    Serves: 12 

    • 365g diced rhubarb
    • 200g caster sugar
    • 3 tablespoons plain flour
    • 200g light brown soft sugar
    • 80g oats
    • 200g plain flour
    • 225g butter

    1. Preheat oven to 190 C / Gas mark 5. Lightly grease a 22x33cm (9x13 in) baking dish.
    2. In a large mixing bowl combine rhubarb, caster sugar and 3 tablespoons flour. Stir well and spread evenly into baking dish. Set aside.
    3. In a large mixing bowl combine brown sugar, oats and 200g flour. Stir well then rub in butter or margarine until mixture is crumbly. Sprinkle mixture over rhubarb layer.
    4. Bake in preheated oven for 40 minutes. Serve hot or cold.

    Our house certainly enjoyed this recipe. It was balanced, not too much of the fruit or topping. The topping was really crunchy and sweet and is now a regular dessert in our house.  -  03 Aug 2011


    Altered ingredient amounts. Used dark brown soft sugar and got a great caramelised result. Also did in separate ramekins for 25 mins  -  06 Feb 2011


    Something else. I only used 110g sugar, and added a peeled, cored, chopped eating apple to the rhubarb. I also left out the flour. It was delish!  -  25 Apr 2010
