Ingredients

110g (4 oz) butter
110g (4 oz) sugar (can add some dark)
2 eggs
3 or 4 bananas (could leave one for end so less mashed)
I made these in large silicon cupcake cases and they took 30 mins in the oven. Slightly crunchy on the outside and really light and moist inside. I had only plain flour so added 3.5 teaspoons of Baking powder (no extra Bicarb) and they rose perfectly. I also boosted a scant 110g of Sultanas with some chopped dried Prunes.
Very quick and simple to make, ended up with extra mixture though, which I made little banana cupcakes with also. This recipe produced a lovely cake which I put some icing on top, and some fresh bananas along the middle. I used dememera sugar only, no castor sugar and this was perfectly fine too.
I made this today, it was so easy-- I threw everything today and then popped it into the oven during my shower-- and then we had lovely warm Banana bread for breakfast. Really user-friendly for me and Eater-friendly for my husband!
