I got this recipe from Carolyn at Craftsbycarolyn.blogspot.com It is one of those recipes that is very simple, very delicious and even people who have failed to make other cakes find this an easy recipe to make.

Ingredients

Banana & Raisin Loaf
4 oz butter
4 oz Sugar (can add some dark)
Add:
2 eggs
Then add
3 or 4 bananas (could leave one for end so less mashed)
Sift and fold in
8oz SR Flour
½ tsp Bicarb
1 tspn Cinammon
5 oz Raisins
180 C for 45 minutes

Preparation method

1. Cream together the butter and sugar
2. Add the beaten eggs
3. Mash 2 or 3 of the bananas and chop up one banana, add to the butter and egg mixture and stir to mix.
4. Sift and fold in the flour, bicarb, cinnamon and raisins.
5. Bake in a greased and lined loaf tin for 45 minutes at 180C

    lovely cake. my kids loved it and its a great way of using up ripe bananas. (for those using gas cook on gas mark 4)

    gr8 recipe esp if you got some bananas you want to use up. really easy to cook and even eaiser to eat - even my fussy teenage ate this, def will be cooking it again
