Sweet wafers

    I served these with my Highland Flummery for last year's Burns supper.

    Serves: 4 

    • oatmeal flour
    • self-raising flour
    • caster sugar
    • honey
    • butter

    Prep:1day  ›  Cook:1day  ›  Ready in:2days 

    1. Mix equal amounts of the flours and sugar (1/3 of each), blend in some warmed or melted butter, then mix in honey until it resembles breadcrumbs. Remember as you mix, it softens. Leave to chill for an hour.
    2. Take a bit of the dough and roll out on a floured surface until about 5mm (1/5 in) thick, as a circle, then cut into wedges. Place these on a floured baking tray and bake for about 10 minutes in the middle of a pre-heated oven (180 C / Gas 4). Remove and cool. At the same time, roll the rest of the dough out, until about 1cm (1/2 in) thick, dust with brown sugar, then cut into squares. Bake these at the same time on a slightly lower height in the oven, about the same time. They should brown outside and be soft inside.
