Tropical Banana Parfait

    A super-delicious frozen dessert, which is flavoured with ripe bananas, cream, rum and caramelised sugar. It's the perfect dessert for the warm summer months.

    Serves: 6 

    • 6 egg yolks
    • 150g caster sugar, divided
    • 6 tablespoons water
    • 4 large ripe bananas, chopped
    • 4 tablespoons dark rum
    • 150ml whipping cream, whipped
    • raspberries to serve

    1. Beat egg yolks with 75g sugar over simmering water until light and fluffy. Set aside.
    2. Heat a non-stick pan until very hot. Add remaining sugar and caramelise to a medium-brown colour. Add water, it will splutter and the sugar will solidify before it dissolves.
    3. Stir in bananas and cook for about 2 minutes. Add the rum and flambe the mixture. Cool and puree. Gently fold in egg yolk mixture and whipped cream.
    4. Line a terrine or loaf tin with cling film, making sure that it extends beyond the rim. Pour banana mixture into the terrine and cover with cling film. Freeze for at least 6 hours.
    5. Serve sliced, garnished with raspberries, if desired.
