This is a beautiful French dish that is perfect for a cold day. I came across this dish in a French market and looked up the recipe in a book. But when making I gave it a Welsh twist by adding a medium sized leek.
250ml of white wine (vina albali is great in for this)
1/2 tsp salt
1/2 tsp ground black pepper
500g of sliced cheese (Reblochon is the original and tastes great)
1 medium leek

Preheat the oven to 180 C / Gas 4.
Heat the olive oil in a large frying pan over medium heat. Stir in the onions and leek and cook, stirring ocasionaly for 4 mins. Add the bacon and cook, stirring for an additional 10 mins. Add the potatoes, white wine, salt and pepper; bring the mixture to a simmer, cover and cook for 8 mins.
Add the cheese, stir until melted and the mixture is hot and bubbling.
