Chocolate and Baileys two tier cheesecake

    Digestives for the base, then cream, cocoa powder, chocolate, cream cheese and baileys for the top.

    Serves: 8 

    • 150g digestive biscuits crushed
    • 45g butter
    • 20g caster sugar
    • 300ml double cream, whipped
    • 150g dark chocolate, melted and cooled
    • 2 tablespoons cocoa powder mixed with a little hot water
    • 2 (200g) tub cream cheese
    • 1 generous measure of Baileys Liqueur

    Prep:5hr  ›  Ready in:5hr 

    1. Mix the crushed digestive biscuits with the melted butter Press into a 18cm cake tin and refrigerate.
    2. Whip half of the cream until soft peak stage. Add cooled melted chocolate, then the cocoa powder mix. Blend well and set aside.
    3. Beat half of the cream cheese and 10g of sugar together. Fold in cream/chocolate mixture and mix thoroughly.
    4. Spread into tin on top of crushed biscuits.
    5. Cool in fridge for a few hours.
    6. Beat the remainder of the cream cheese.
    7. Add the measure of baileys and 10g sugar.
    8. Whip remaining cream fold it into the cream cheese and baileys
    9. Gently add this on top of the chocolate cheesecake
    10. Place in fridge for a few hours
