Whisk eggs with milk, salt, diced pepper, cooked bacon and salt; beat for about 2 minutes.
Over medium-high temperature, heat a non-stick frying pan and melt the butter. Before the butter completely melts, add the egg mixture. Wait until the egg sets, then use a spatula and push the eggs toward the centre, tilting the pan to distribute the runny parts.
Do this repeatedly. After it's all set, flip over the eggs and break apart large pieces for another 20 seconds.
Transfer to a serving plate, add grated mozzarella on top of the eggs. Serve hot.
