This is a delicious low fat meal and really good on the BBQ in the summer too! I serve this with a green salad and rice, use brown to make it a low GI dinner.
Place the turkey into a bowl, mix together the lemon juice, chilli flakes and garlic, season to taste and pour over the meat. Leave to marinade for at least 20mins.
Meanwhile, dice the pepper and tomatoes.
When the turkey has marinaded, take 4 large skewers and thread the turkey, tomatoes and peppers onto the skewers.
Grill or BBQ untill the meat is cooked through (10-15 mins)
