Guinness® and chocolate cheesecake

    A close friend is a cheesecake and Guinness fanatic. He requested a Guinness cheesecake for his 25th birthday; this is the result. It is quite smooth and very rich.

    Serves: 12 

    • 110g crushed chocolate biscuits
    • 50g butter, softened
    • 2 tablespoons caster sugar
    • 1/4 teaspoon best quality cocoa powder
    • 3 (200g) tubs cream cheese, softened
    • 175g caster sugar
    • 3 eggs
    • 450g plain chocolate, chopped
    • 2 tablespoons double cream
    • 225ml soured cream
    • 1 pinch salt
    • 175ml Guinness®
    • 2 teaspoons vanilla extract
    • 30g plain chocolate

    1. Preheat the oven to 180 C / Gas mark 4. Prepare a 23cm (9 in) springform tin with butter.
    2. Combine the crushed biscuits, butter, 2 tablespoons sugar and cocoa in a small bowl; mix; press into the bottom of the prepared springform tin.
    3. Place the cream cheese in a large bowl and beat with an electric mixer set to low speed until smooth. While beating, slowly add 175g sugar and then the eggs, one at a time. Continue beating until smooth.
    4. Combine the chocolate and double cream in a microwave-safe bowl. Heat in the microwave until the chocolate is completely melted, stirring every 30 seconds. Beat the chocolate into the cream cheese mixture. Add the soured cream, salt, Guinness and vanilla; blend until smooth. Pour the mixture over the base. Place the tin into a large, deep baking dish. Fill the dish with hot water to cover the bottom half of the springform tin.
    5. Bake the cheesecake in the water bath in the preheated oven for 45 minutes; turn oven off; leave the cheesecake in the oven with oven door slightly ajar another 45 minutes; remove from oven. Run a knife along the edge of the cheesecake to loosen from tin. Chill in refrigerator at least 4 hours.
    6. Melt 30g of plain chocolate in a small bowl using the microwave. Make chocolate clovers by dropping 3 small drops of melted chocolate close to one another on greaseproof paper. Drag a skewer from between two dots outward to make the stem; chill until hardened. Arrange the chocolate clovers on top of the chilled cheesecake for decoration.

    Disgusting gooey sickly mess, guinness does nothing for it. Would have given it no stars if I could  -  20 Apr 2017


    Wow, this is something else, will definately be making it again but due to the cost it will be only for special occasions:-( everyone loved it.  -  03 Oct 2013
