About this recipe: Perfect for toasting, this fruit loaf also freezes well.

Serves: 32 

  • 625g plain flour, divided
  • 2 (7g) sachets dried active baking yeast
  • 2 tablespoons sugar
  • 2 teaspoons ground cinnamon
  • 1 teaspoon salt
  • 1/4 teaspoon bicarbonate of soda
  • 350ml warm orange juice (50 degrees C)
  • 125ml warm water (50 degrees C)
  • 60ml vegetable oil
  • 50g chopped walnuts
  • 100g chopped mixed peel

  1. In a mixing bowl, combine 250g flour, yeast, sugar, cinnamon, salt and bicarbonate of soda. Add orange juice, water and oil; beat until moistened. With an electric mixer, beat on high for 3 minutes. Stir in the nuts, mixed peel and remaining flour to form a stiff mixture. Do not knead.
  2. Butter and flour two 20x10cm loaf tins. Spoon mixture into tins. Cover and let rise in a warm place until doubled, about 45 minutes.
  3. Bake at 180 C / Gas mark 4 for 35 to 40 minutes or until golden brown. Immediately remove from tins to cool on wire racks. Slice and toast.
