    About this recipe: This fresh chicken salad is packed with flavour. Best served over crisp lettuce leaves, like romaine or iceberg.

    Serves: 6 

    • 5 rashers bacon
    • 170ml (6 fl oz) mayonnaise
    • 1 tablespoon chopped fresh parsley
    • 2 tablespoons chopped spring onion
    • 1 teaspoon fresh lemon juice
    • 1 dash Worcestershire sauce
    • salt and freshly ground black pepper to taste
    • 450g (1 lb) boneless chicken breast fillets, cooked and chopped
    • 200g (7 oz) cherry tomatoes, halved
    • 2 sticks celery, chopped
    • 12 to 18 leaves cos (romaine) lettuce
    • 1 avocado - peeled, stoned and sliced

    1. Place bacon in a large, deep frying pan. Cook over medium high heat until evenly brown. Dice and set aside to cool.
    2. In a medium bowl, prepare dressing by whisking together the mayonnaise, parsley, spring onions, lemon juice, Worcestershire sauce, salt and pepper.
    3. Add the chicken breast, tomatoes, celery and bacon to the dressing and toss well to coat.
    4. Refrigerate until chilled; serve over lettuce leaves and garnish with avocado slices.
