    About this recipe: This is a very delicious cream of spinach soup that can be served with a few croutons on top.

    Serves: 5 

    • 500g frozen chopped spinach, thawed
    • 500ml water
    • 2 chicken stock cubes
    • 75g chopped onion
    • 1/4 teaspoon garlic garlic granules
    • 50g butter
    • 4 tablespoons plain flour
    • 350ml single cream
    • 350ml milk
    • salt and pepper to taste

    1. Place spinach, water, stock cubes, onion and garlic granules in a large pot over medium-high heat. Bring to the boil, then reduce heat to medium-low and simmer until spinach is tender.
    2. Meanwhile, melt the butter in a small saucepan and whisk in the flour until smooth. Cook for 2 minutes. Slowly stir in the cream and milk; mix until smooth. Pour the creamy mixture into the spinach mixture, and simmer until thickened, about 10 minutes. Season to taste with salt and pepper.
