Sunny Day Chicken Salad

    This is a fabulous use for left over roast chicken; quick and easy to make + very refreshing to eat! The ingredient amounts are general and based on personal preference more than anything

    Serves: 1 

    • 250g of roast chicken (preferably breast), cubed
    • 1 ripe avocado (diced)
    • 1 large or 2 small ripe tomatoes (diced)
    • 30 to 50g of diced cucumber (skin on preferably)
    • 1 palmful of chopped fresh coriander
    • 1 tablespoon of extra virgin olive oil
    • 1 tablespoon of capers
    • salt, pepper & sunshine!

    Prep:5min  ›  Cook:5min  ›  Ready in:10min 

    1. Mix everything into one bowl.
    2. Stir until all ingredients are evenly distributed through the salad.
    3. Salt & Pepper to taste.
    4. Set in the sun for 5 minutes to warm.
    5. Enjoy!
