This is a recipe my mother taught me to make. A great, simple, tasty sponge cake that you can whip up in a rush using simple store cupboard ingredients. No fuss. It tastes great with or without icing, and you can serve it with almost anything. the ultimate simple pleasure.
Replace 85g (3 oz) of the flour with 85g (3 oz) cocoa powder for a chocolate cake.
This recipe is for 1 sponge cake, but can also make 2 smaller cakes suitable for a Victoria sandwich. This recipe an also be used to make fairy/queen cakes, which are great for a child's birthday party. They are not too sweet, and are a tasty base for a whole host of toppings, icing, chocolate, sprinkles and what ever else you can think of. Enjoy!

did not tell me in the ingredients that i needed vanilla extract !!!!! i am not happy about this i didn't notice until it was in the baking tray , nearly messed up my celebratory cake , i was not happy , it ruined the cake-making experience . although it has not finished cooking i hope it will worth it! 😊 nothing against the recipe just the way its worded 😊 - 12 May 2013
