I like to make this jam once cherries are in season from May.
Ingredients

875g finely chopped sour cherries

1kg sugar

1 (13g) sachet pectin, like Silver spoon
Preparation method
- In a large pot, combine cherries and sugar. Bring to a full rolling boil, stirring constantly. Add pectin; return to a full rolling boil. Boil 1 minute, stirring constantly. Remove from the heat; skim off foam. Pour hot jam into hot jars, leaving 6mm headspace. Adjust caps. Process for 10 minutes in a boiling-water bath.
