Gluten free bread

    This quick and easy gluten free bread is full of fibre (from the flax and almond) and tasty in oh so many ways. It's great toasted and spread with goat cheese, nut butter or dipped in olive oil.

    Serves: 7 

    • 175g almond flour
    • 100g arrowroot powder
    • 4 tablespoons ground flax seeds (linseeds)
    • 1/2 teaspoon celtic sea salt
    • 1/2 teaspoon bicarbonate of soda
    • 4 eggs
    • 1 teaspoon agave nectar
    • 1 teaspoon apple cider vinegar

    1. In a medium bowl, combine almond flour, arrowroot, flax meal, salt and bicarb.
    2. In a larger bowl, blend eggs 3-5 minutes until frothy.
    3. Stir agave and vinegar into eggs.
    4. Mix dry ingredients into wet.
    5. Pour batter into a greased medium sized loaf tin.
    6. Bake at 180 C / Gas mark 4 for 30-35 minutes, until a skewer inserted into centre of loaf comes out clean.
    7. Cool and serve.

    Almond flour

    Almond Flour is almost the same as ground almonds, but it has a finer texture. Try purchasing blanched almond flour online if you're not able to find it in health shops. To make your own, grind blanched almonds yourself using a clean spice grinder. Using the food processor results into an oily almond paste, not a powdery result like flour. Since almond flour is not readily accessible in regular supermarkets, try grinding them using the spice grinder which produces a comparable almond flour product. Read more about almond flour here.

    I was nicely surprised with this recipe it turned out really well. Used a heaped tablespoon of honey instead of agave. Almond meal was unblanched almond meal and gave it a bit of extra fibre so I left out the flax seeds and it was fine.  -  21 Apr 2017  (Review from Allrecipes AU | NZ)
