Anne's homemade fresh chorizo

    This fresh chorizo is delicious, easy to make and way better than shop bought. I keep some in the freezer at all times for a quick and easy breakfast with scrambled eggs and cheese. Enjoy!

    Serves: 12 

    • 1kg beef mince
    • 500g minced pork
    • 3/4 cup chilli powder
    • 3/4 teaspoon dried oregano
    • 3 cloves garlic, minced
    • 2 teaspoons salt
    • 180ml dry red wine
    • 60ml vinegar

    Prep:10min  ›  Cook:5min  ›  Extra time:2days24hr45min  ›  Ready in:3days 

    1. In a large bowl, mix together the beef, pork, chilli powder, oregano, garlic, salt, red wine and vinegar. I find that using my hands works the best. Cover, and refrigerate for 2 to 3 days. Take out daily, and mix thoroughly.
    2. If you are not going to cook with it immediately, divide it into 500g portions, and store in freezer bags in the freezer.

    Paprika, not chili? Unless this is particularly insipid chili powder! A bit if chili certainly, and where is the wine?  -  12 May 2016


    **DO NOT ADD JALAPENO JUICE as another reviewer stated! This will change the flavor completely. Mexican chili powders vary in flavor and spice by brand and variety. For more depth of flavor, MIX the chili powders. I personally used 3 different powders with fabulous results.
