    About this recipe: Barbecued cinnamon coconut pineapple rings! You can't eat just one ring!

    Ingredients
    Serves: 8 

    • 1 fresh pineapple - peeled, cored and cut into rings
    • 4 tablespoons tinned coconut milk
    • 75g sugar
    • 1 to 2 tsp cinnamon

    Method

    1. Preheat a barbecue for medium heat. When the BBQ is hot, lightly oil the grate.
    2. Place the coconut milk in one dish, then cinnamon and sugar in another. Dip slices of pineapple into coconut milk, then coat in cinnamon sugar.
    3. Barbecue slices for 6 minutes on each side. Remove to plates, and serve.
