BBQ sea bass with Cyprus style dressing

    This sea bass rescipe has been passed down through generations its was made many years ago in Cyprus when the men came home from the fishing boats and they would cook the fish on the charcoal. The fish should be really fresh check the eyes the should be bright and shiny and it should not smell fishy. Good fresh fish smells of the sea.

    Serves: 4 

    • glass half filled with extra virgin olive oil
    • 1 large onion finely diced
    • 1 clove of garlic crushed into a paste
    • handfull of fresh parsley finely chopped
    • 12 table spoons of lemon dressing
    • juice of 3 fresh lemons
    • half a hot chilli, finely choped
    • 1 teaspoon of salt

    1. Put all the ingredents into a jam jar put of the lid and shake untill it all comes together, when the fresh sea bass has finished cooking over the charcoal, open the fish on a large plate and spoon over the tasty dressing for the most amazing Mediterranean fish you have ever had.
