Special Fruity Flapjacks

    A tasty oaty treat with a fruity edge to it. These are great tasting and versatile. You can pick the dried fruit of your choice and they will still taste delicious. For a lemony kick substitute the orange rind for lemon rind and add a tablespoon of lemon juice. They will keep for upto a week in an airtight container. Do not freeze.

    Serves: 24 

    • 175g butter
    • 175g soft light brown sugar
    • 125g golden syrup
    • 350g rolled oats
    • 150g sultanas
    • 100g chopped dried apricots
    • 2 teaspoons ground cinnamon
    • 1 orange - rind grated/zested

    Prep:15min  ›  Cook:25min  ›  Ready in:40min 

    1. Preheat the oven to 180 C / Gas 4. Line or grease a 16x26cm baking tin.
    2. Melt butter, sugar and golden syrup in a pan over a low heat. stir occasionally.
    3. Meanwhile mix the remaining ingredients in a large bowl.
    4. Pour the butter mixture into the dry ingredients and combine. Gently press into the prepared tin.
    5. Bake for 25-30 mintues - until mixtures starts to brown at the edges.
    6. Cool for 10 minutes then cut into rows of 4 x 6.
    7. When completely cooled remove from the tin and store in an aritight container.

    Really easy to make. I added some chopped dates (the sort you get at Christmas time that no one usually eats) to the chopped apricots. It says they will last a week - not in my house they won't!  -  25 Feb 2013

    awesome recipe! I used 400g of fruit and berries(cranberries, raisins, currents, saltanas etc) instead of the recomended fruits (loved it).  -  30 Nov 2013
