    About this recipe: This is a wonderful tasting egg mayo that you will definitely devour. Use on lettuce for a salad or in sandwiches, floury baps or crusty rolls for a picnic.

    Ingredients
    Serves: 4 

    • 8 eggs
    • 8 tablespoons mayonnaise
    • 1 teaspoon mustard
    • 4 tablespoons chopped spring onion
    • salt and pepper to taste
    • 1/4 teaspoon paprika

    Method
    Prep:10min  ›  Cook:15min  ›  Extra time:10min  ›  Ready in:35min 

    1. Place egg in a saucepan and cover with cold water. Bring water to the boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
    2. Place the chopped eggs in a bowl, and stir in the mayonnaise, mustard and spring onion. Season with salt, pepper and paprika. Stir and serve on your favourite bread.

    The best egg mayonnaise recipe I have tried to date. I used Dijon mustard as the type wasn't specified but this worked for me. Sublime simply sublime. - 25 May 2013
