Granny's ice cream

    This is my Grandmother's recipe for ice cream. It's yummy, doesn't require an ice cream maker, very simple and can be made into any flavour of ice cream on the planet.

    Serves: 4 

    • 4 egg whites
    • 160ml soured cream
    • 100g caster sugar
    • vanilla

    1. In a large glass or metal mixing bowl, beat egg whites until foamy. Gradually add sugar and vanilla, continuing to beat until soft peaks form. Carefully fold in soured cream until well blended. Fold in any additional flavourings at this time.
    2. Place the mixture into the freezer and stir every 30 minutes or so until frozen. This can be made without stirring, but the texture will be icy rather than creamy. If you have an ice cream maker, you can put the ice cream mixture in the maker, and follow the manufacturer's instructions.

    Cook's note

    For coffee flavour: add 2 teaspoons instant coffee. For sultana rum: Soak a handful of sultanas in rum for a few minutes before adding to the mixture. These are just a few of my favourites. You can really go wild, adding chocolate, fruit, spices... whatever you like. It's VERY versatile.

    I made this ice cream into Mint Choc Chip. Added Mint extract in place of the vanilla. 4 Drops of green food colouring (it made it bright green, but when it came out of the freezer the colour had faded more to a very pale natural green), Chocolate crunch sprinkles and finished with chopped chocolate chips. I followed the first step as written but then used my ice cream maker, then left overnight to firm up. Nice ice cream will make it again, only negative for me it is very, very soft so melting by the time you scoop it out of the tub.  -  26 Feb 2010


    I am in America and I am not sure this recipe calls for what we call "sour cream" thick and white when bought or if you mean let heavy liquid cream go sour then use it. Could you clarify and can not wait to try this!  -  10 May 2015


    I didn't really like this ice cream. To me, it was very sour and full of ice crystals. To fix this problem, I invented Granny's Ice Cream II. I used only 3 egg white instead of 4 and I used 1 cup of vanilla yogurt instead of sour cream. Thus, I omitted the vanilla.
