1/2 pack of sponge fingers
2 tbs peach schnapps
1 peach stoned and diced
225g fresh raspberries
Packet of raspberry jelly made with a pint of water
Pint of custard
300ml whipping cream
Chocolate shavings to taste

In a large bowl lay out the sponge fingers until they cover the bottom, pour over the peach schnapps and top with the fruit.
Make the jelly according to pack instructions and pour over the fruit and sponge, leave in the fridge overnight to set.
Make up a pint of custard according to pack instructions, leave to cool and pour over the jelly.
Whip the cream until it is stiff, spread over the custard and top with chocolate shavings.
