    About this recipe: This can be served warm or cold over ice cream. Also good over cheesecake. Store in refrigerator.

    Serves: 16 

    • 4 tablespoons butter
    • 275g dark brown soft sugar
    • 16 large white marshmallows
    • 2 tablespoons golden syrup
    • 1 dash salt
    • 250ml evaporated milk
    • 60g chopped pecans, toasted
    • 1 teaspoon vanilla extract

    1. Melt butter in a saucepan over low heat. Stir in brown sugar, marshmallows, golden syrup and salt. Bring to the boil over low heat, stirring constantly. Boil for 1 minute. Remove from the heat, and cool for 5 minutes. Stir in evaporated milk, pecans and vanilla; mix well.
