    About this recipe: Delicious fish cakes made with cod, potatoes, onion, butter and parsley! You can substitute salmon for cod if you would rather make salmon cakes.

    Ingredients
    Serves: 4 

    • 2 large potatoes, peeled and halved
    • 450g cod fillets, cubed
    • 1 tablespoon butter
    • 1 tablespoon grated onion
    • 1 tablespoon chopped fresh parsley
    • 1 egg
    • 3 tablespoons oil for frying

    Method

    1. Place the potatoes in a large pot of water, bring the water to the boil. Let the potatoes cook until they are almost tender.
    2. Add the fish to the pot and let the fish and potatoes cook until they are both soft. Drain well and transfer the potatoes and fish to a large mixing bowl.
    3. Add butter, onion, parsley and egg to the bowl; mash the mixture together. Mold the mixture into fish cakes.
    4. Heat oil in a large frying pan over a medium-high heat. Fry the fish cakes on both sides until golden brown. Drain on kitchen roll before serving.

    Alternatives to cod:

    Try this recipe with inexpensive fresh coley or pouting. They both belong to the cod family but are much cheaper and available in larger supermarkets or fishmongers.

    made at the weekend, i probably used too much parsley as they turned green. Very nice. I grilled rather than fried. - 18 Oct 2010

    Very quick and easy to make, tasted good too. I did add salt and pepper though and used some flour to mold as it was a bit sticky, probably did not drain well enough. But was very happy with the finished result. Will definitely be using the recipe again. - 20 Jan 2015
