Easy salmon fish cakes

    My kids do not like anything fishy. I snuck this one by them and they loved it. I serve them as snacks, in sandwiches or as dinner with rice and a veggie on the side. Personally I like to dip them in horseradish.

    Serves: 5 

    • 1 (418g) tin salmon, drained and flaked
    • 2 eggs, beaten
    • 4 tablespoons seasoned dried breadcrumbs
    • 4 tablespoons instant mashed potato flakes
    • 1 medium onion, minced
    • 1 clove garlic, minced
    • 1/4 teaspoon dried dill
    • 1/4 teaspoon celery salt
    • salt and pepper to taste
    • 2 tablespoons olive oil

    1. In a medium bowl, mix salmon, eggs, breadcrumbs, potato flakes, onion, garlic, dill, celery salt, salt and pepper. Form the mixture into 5cm (2 in) balls, and flatten into patties about 1cm (1/2 in) thick.
    2. Heat olive oil in a medium frying pan over medium heat. In batches, cook patties about 5 minutes on each side, until lightly browned.

    Very tasty, easy to do. I didnt have enough Salmon so i mixed a tin of Salmon & a tin of Tuna together. I also coated with beaten egg and covered with breadcrumbs.  -  21 Jan 2010

    Great ,never made fish cakes before so I was glad to use this recipe ,very easy and tasted good ,used a fresh potato rather than instant ,and spring onion.Im sure I shall be making these again .😀  -  11 Jul 2016
