Roast Lemon & Oregano Chicken

    Just tried this today and thought I'd share. I served it with plain rice and veg, but I'm sure it'd be nice with new potatoes and fresh vegetables as well! I have a large family with lots of little children who only eat small portions (this fed 2 adults, 5 children and 1 baby). However, it'd be more suitable I think for 2-4 adults or similar. It was very subtle in taste.

    Serves: 6 

    • 3lb roasting chicken
    • 2 cloves of garlic, minced
    • few sprigs of fresh Oregano
    • butter
    • sprinkle of salt
    • sprinkle of pepper
    • sprinkle of chicken seasoning / dried herbs
    • 1 lemon

    1. Wash chicken and pat dry.
    2. Brown top of chicken in frying pan.
    3. Place a few sprigs of fresh oregano and the minced garlic inside the chicken's cavity.
    4. Place the chicken in the slow cooker, rub with butter and sprinkle with salt, pepper and chicken seasoning or dried herbs.
    5. Grate some lemon rind over the chicken, then slice the lemon in half and squeeze the juice over the chicken. I then placed half the lemon in the slow cooker with the chicken.
    6. Leave to cook on Low for 6 hours.
