Faux fried rice

    I learnt how to make this no-rice fried rice when I discovered I had to be careful with carbs. My grandma died of Diabetic related diseases, so I wanted to make sure I didn't go the same way. This recipe is Diabetic safe and great for vegans, children and celiacs. The picture I have for this recipe is my first attempt which had a scrambled egg and peas in it. It was just as good, but I found that I don't do too well with egg, so I now eat this recipe instead. Both taste great though.

    Serves: 2 

    • 1 grated cauliflower, as much as you can eat
    • a bit of broccoli
    • some fresh sweetcorn shaved off one cob
    • 1 small red onion, thinly sliced
    • 1 large garlic clove, finely chopped
    • a few shakes of "bacon" bits (soya product)
    • 50g peas
    • veggie salt to taste
    • 2 tablespoons rapeseed oil

    1. Throw ingredients into a wok, heat and eat.

    Used different ingredients. I added a little soy sauce, the egg and peas as mentioned and some diced ham. I omitted the vegie salt and the corn as i did have any.  -  26 Nov 2010  (Review from Allrecipes AU | NZ)
