Cream butter and sugar; add egg yolks and beat well. Add flour sifted with cocoa, then add milk and vanilla, mixing slowly at first. Lastly fold in the stiffly-beaten egg whites. Pour into a flame-proof dish and stand in a baking dish of hot water. Bake in a oven preheated to 180 C / Gas 4 till top is firm to the touch. The bottom will have the texture of a creamy sauce.
