Cookpot Casserole

I started making this when I went full time at work, it's full of goodness and is ready when I get home. I can just dish it up and rest!

Ingredients

1 joint of meat (beef, pork or chicken)
1 tablespoon of bouillion (organic stock)
1 pint of water
1 handful of mung beans
1 handful of aduki beans
1 handful of soup mix (lentil mix, really cheap)
1/2 butternut squash, peeled and cubed
6 carrots, top and tailed and chopped (if organic i dont peel)
1/2 a swede, peeled and cubed
5 washed potatoes (I dont peel), cubed
2 tsp of chicken bovril or marmite

Preparation method

1. Place all ingredients in a slow cooker on low and leave all day to cook, take out the meat when ready and slice (it will fall apart) and dish the rest up. If there's too much veg, i freeze the leftovers.

    I fried the vegetables and the joint of brisket first and added a clove of garlic. also soaked the beans overnight and then boiled them for 10 minutes before adding to the cooker - delicious!
