Chicken cordon bleu

    This chicken cordon bleu is easy and delicious! It's one of my husband's favourites! Try to use the largest chicken breasts you can find so you'll be able to roll them easier.

    Serves: 4 

    • 4 skinless, boneless chicken breast fillets
    • 1/4 teaspoon salt
    • 1/8 teaspoon ground black pepper
    • 6 slices cheese, such as Gruyere or Emmentaler
    • 4 slices cooked ham
    • 60g seasoned dried breadcrumbs

    1. Preheat oven to 180 C / Gas 4. Lightly oil a baking dish or line with baking parchment.
    2. Pound chicken breasts to 6mm thickness.
    3. Sprinkle each piece of chicken on both sides with salt and pepper. Place 1 cheese slice and 1 ham slice on top of each breast. Roll up each breast, and secure with a wooden skewer. Place in baking dish, and sprinkle chicken evenly with breadcrumbs.
    4. Bake for 30 to 35 minutes, or until chicken is no longer pink. Remove from oven, and place 1/2 cheese slice on top of each breast. Return to oven for 3 to 5 minutes, or until cheese has melted. Remove skewers, and serve immediately.

    I roll in bread crumbs then place it on a cookie sheet. Place a slit on the top so the excess cheese can exit the top, indicating it is cooked  -  07 Mar 2013


    Love this meal and has become a firm favourite in my house!! We are mushroom lovers, so I added some chopped mushrooms before I rolled the chicken! Was lush!!  -  29 Feb 2012


    Something else. Added paprika to the breadcrumbs which gave it a slightly different slant. Part fried it so the breadcrumbs were golden and then put it in the oven for 20 mins whilst I fryed courgetts in butter with chopped fresh chilli and garlic and served with freshly boiled rice...very tasty!  -  14 Jul 2010
