Chilli marinated salmon

    A moist salmon fillet in a light chilli and white wine marinade that all fish lovers will enjoy. Use only the freshest salmon and ask your fishmonger to fillet it for you. Serve with baby potatoes in parsley butter, carrots and green beans (or veg of your own choice).

    Serves: 4 

    • 4 (200g) salmon fillets
    • 1 pinch salt
    • 4 chilli peppers
    • 3 tablespoons lemon juice
    • 125ml white wine
    • chopped parsley

    1. Remove the skin from the salmon (optional) and place all the fillets in a shallow container. Season with a pinch of salt.
    2. Finely chop the chilli peppers and sprinkle over the salmon. Add the lemon juice, white wine and parsley. Cover with a lid and place in the fridge for 30 minutes.
    3. Remove from fridge and place each fillet on a piece of catering foil large enough to make a parcel.
    4. Pour the marinade liqueur to each piece of salmon, then seal the parcel leaving room for air inside.
    5. Place each parcel in a steamer and cook for 10 to 15 minutes.
