    About this recipe: This is a recipe from my mother's recipe book from 70 years ago.She made this drink ready for the workers in the hayfield, and it was welcomed by them on a hot sunny day, and the smell of this drink is so evocative of the sweet smell of hay being worked. This is so easy to make, and costs so little, and is ready to drink after a few days, but if kept, becomes fizzy and alcoholic. The children love it, but make sure they drink it soon!

    Serves: 24 

    • 3 heads of fresh elderflowers
    • 1 lemon, thinly sliced
    • 1 1/2 lbs (675g) sugar
    • 8 pints (4.8 litres) cold water

    1. Place all ingredients in a large crock or pot.
    2. Stir well to dissolve the sugar.
    3. Cover with a teatowel, and leave for 24 hours.
    4. Bottle, using screw tops if possible.
    5. Leave for a day or two before drinking.
    6. Keep an eye on it if kept for a few weeks, as if becomes fizzy.
