About this recipe:
These mushrooms will really grow on you, especially when served as a Christmas starter.
250ml (8 fl oz) red wine
125ml (4 fl oz) red wine vinegar
5 tablespoons olive oil
2 tablespoons brown sugar
2 cloves garlic, minced
1 teaspoon chilli flakes
4 tablespoons red pepper, diced
450g (1 lb) fresh mushrooms, stems removed
4 tablespoons chopped spring onions
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon ground black pepper
- In a saucepan over medium heat, combine the wine, vinegar, oil, sugar, garlic, red pepper, chilli flakes and mushrooms. Bring to the boil, cover and set aside to cool.
- Once cooled, stir in the spring onions, oregano, salt and pepper. Serve chilled or room temperature.
