    About this recipe: These mushrooms will really grow on you, especially when served as a Christmas starter.

    Serves: 9 

    • 250ml (8 fl oz) red wine
    • 125ml (4 fl oz) red wine vinegar
    • 5 tablespoons olive oil
    • 2 tablespoons brown sugar
    • 2 cloves garlic, minced
    • 1 teaspoon chilli flakes
    • 4 tablespoons red pepper, diced
    • 450g (1 lb) fresh mushrooms, stems removed
    • 4 tablespoons chopped spring onions
    • 1 teaspoon dried oregano
    • 1/2 teaspoon salt
    • 1/4 teaspoon ground black pepper

    1. In a saucepan over medium heat, combine the wine, vinegar, oil, sugar, garlic, red pepper, chilli flakes and mushrooms. Bring to the boil, cover and set aside to cool.
    2. Once cooled, stir in the spring onions, oregano, salt and pepper. Serve chilled or room temperature.
