About this recipe: Here's a cranberry sauce for more adventurous eaters.

Serves: 20 

  • 450g fresh or frozen cranberries
  • 250ml water
  • 400g caster sugar
  • 2 (10cm) cinnamon sticks
  • 1/2 teaspoon salt
  • 80g chopped onion
  • 160g sultanas
  • 100g thin apple slices
  • 100g thin pear slices
  • 60g sliced celery
  • 50g flaked almonds
  • 2 teaspoons lemon zest

  1. Combine cranberries, water, sugar, cinnamon sticks and salt in a large saucepan. Bring to the boil, reduce heat, and cook until berries begin to burst, about 10 minutes.
  2. Stir in onion, sultanas, apple, pear and celery. Cook on medium heat 15 minutes, stirring occasionally. Remove from heat.
  3. Stir in the almonds and lemon zest to combine. Remove cinnamon sticks. Cool before serving, about 1 hour.
