My Greek salad

    I get bored with convention and I love to experiment and try new flavours for salads. I never put oil on this salad, it makes it far too greasy!

    Serves: 6 

    • 2 little gem lettuces, shredded (by your delicate hands)
    • 2 big beef tomatoes
    • 1 red onion
    • 1 cucumber
    • 1 block feta cheese
    • 2 cloves of garlic, crushed
    • a liberal sprinkling of lemon juice
    • a liberal sprinkling of green olives
    • mixed herbs

    1. Shred the little gem lettuces and put into a huge bowl. Chop the tomatoes and add them to the lettuce. Slice the onion into half-rings and press out over the lettuce and tomatoes. Cut the cucumber into cubes and add to your ingredients. Cut the feta cheese into little cubes and toss into the salad. Crush the garlic.
    2. Pour a good sprinkling of lemon juice into a bowl and add the garlic, stir these together. Leave to one side.
    3. Add a good handful of green olives.
    4. Dress the salad with the garlic and lemon juice (I find that using my hands gets the whole salad beautifully dressed!).
    5. Toss some mixed herbs into the salad. Serve with crusty bread or ciabatta and a nice glass of red wine! Enjoy!

    Cook's note

    Wash all the veg before using, you never know what little surprises you can find on lettuce leaves!
