Chilli con carne with avocado and pasta

    This dish combines fresh avocado, lime, spring onion, tomato, garlic and coriander with chilli con carne. It's a quick fix for a weeknight supper, and especially filling served over pasta.

    Serves: 6 

    • 250g (9 oz) pasta of your choice
    • 1 avocado - stone removed, peeled and cubed
    • 1 tablespoon lime juice
    • 1 (400g) tin beef chilli con carne or your own recipe
    • 3 spring onions, chopped
    • 2 large tomatoes, diced
    • 1 teaspoon minced garlic
    • 15g fresh coriander, chopped

    1. Cook pasta according to packet instructions; drain.
    2. In a small saucepan over medium heat, combine chilli, spring onion, tomatoes, garlic and coriander to heat through.
    3. In a small bowl, combine avocado and lime juice.
    4. Serve pasta topped with chilli mixture and avocado.

    I picked this recipe because it seemed simple and it included similar ingredients from the Caribbean sweet potato salad that I also made.
