About this recipe:Rum, pineapple and coconut in a cupcake! Taste even better if served with the real thing.
230g soft butter
2 teaspoons of baking powder
40ml dark rum
140g of pineapple, cut into small pieces

Preheat the oven to 180 C / Gas 4. Line a muffin tin with paper cases.
Combine flour and baking powder in a bowl. Combine the milk and rum in a measuring jug.
In a large bowl, mix the butter with an electric mixer till creamy. Gradually add the sugar and continue beating for 3 mins. Add the eggs one at a time, beating after each addition.
Add the dry ingredients to the butter mixture in thirds, alternating with the milk mixture.
Place a few pineapple pieces in each muffin case, and fill 2/3 full with the cake mixture. Bake in the preheated oven for 20 minutes.
To make the icing: With an electric mixer, beat the butter, milk, vanilla and 1/2 of the icing sugar on medium speed for 3 to 5 mins. Gradually add remaining sugar, still beating. Continue beating for 2 minutes, then stir in the coconut.
Ice the cupcakes after they've cooled completely, and sprinkle with additional coconut for decoration.
This recipe is delicious and earned 19 out of 20 points in the WI cooperative section of the Gower show 2011. I altered the recipe slightly by using coconut milk and a dash of Malibu in place of milk for the butter cream and pineapple juice in place of milk in the main cake recipe. I decorated the cake with a small slice of pineapple a cocktail cherry and a cocktail umbrella to mimic an actual Pina colada drink. A huge success!!! - 25 Sep 2011
This recipe is perfect in every way. Came out Light and Fluffy. one point though is i used muffin cases and mixed a batch for 12, but they produced about 15 muffin sized cupcakes. Can't complain. - 20 Nov 2012
