    About this recipe: Delicious, bite size toffee that is easy to make, and also makes a great gift. A toffee slab is coated with chocolate and walnuts, then broken into pieces.

    Ingredients
    Serves: 20 

    • 225g butter
    • 200g caster sugar
    • 1 tablespoon golden syrup
    • 3 tablespoons water
    • 150g chopped walnuts, divided
    • 150g plain chocolate, chopped

    Method
    Prep:10min  ›  Cook:20min  ›  Extra time:15min  ›  Ready in:45min 

    1. Butter a 23cm square baking dish, and set aside.
    2. Melt 225g butter in a large saucepan over medium heat. Stir in the sugar and syrup until smooth. Heat to 145 degrees C using a sugar thermometer.
    3. When the temperature has been reached, stir in 2/3 of the walnuts, and cook for 3 more minutes, stirring constantly. Pour into the prepared dish, and allow to cool. When the toffee is cooled, remove from the dish, and place onto greaseproof paper.
    4. Melt chocolate chips in a metal bowl over a pan of simmering water, or in a glass bowl in the microwave, stirring frequently until smooth.
    5. Spread 1/2 of the melted chocolate onto one side of the toffee slab, and sprinkle with half of the remaining nuts. Allow to cool until set, then repeat with the other side. Break into bite size pieces when set.

    John-These were very easy to make and sooo good. I didn't see where the water was to be added on the directions so I added that in when I added the sugar and corn syrup - I believe that was correct. Thanks again!  -  08 Dec 2003  (Review from Allrecipes US | Canada)

    I had the same problem! Even made it twice, brought the 1st batch to 290 & the 2nd got to 300 - had to throw both away... It is the 1st time I am making toffee with white sugar - don't know if that is giving me the problem or not, but going back to my brown sugar recipe... so disappointed!  -  15 Dec 2006  (Review from Allrecipes US | Canada)
