Curry chicken fajitas

    A nice spicy chicken meal...easy to cook, easy to prepare and quick to make.

    Serves: 8 

    • chicken breasts
    • 3 tbl spoon curry powder
    • 2 tbl spoon oil
    • cucumber
    • tomatoes
    • 1 tin of sweetcorn
    • 1 red pepper (or green)
    • a jar of chunky salsa (medium, or hot)
    • 2 packets of floured wraps

    Prep:15min  ›  Cook:20min  ›  Ready in:35min 

    1. First, cut up all your veg (make sure its very small) and put to one side.
    2. Secondly, cut up the chicken breast in to very small chunks and add to a frying pan to cook. Pour over the 2tbl spoons of oil and cook until white. Then, add in the curry powder and mix it all together. Turn the heat onto (gas) low / (electric) 5.
    3. Open the jar of salsa and put on the wraps (which can be spread out on a flat surface) and a easy way to do this is to put the salsa in the middle and use a knife to spread it around. Add the veg but...make sure you put it going in a straight line. Now add the chicken on top of the veg and then fold (an easy way to fold it is to get the ends where the top and the bottom of the veg is and fold both sides. Then turn it around and fold the other end so it urns into and rounded rectangle). Well done you have made it now all you need to do is tuck in.

    I bought everything for fajitas but forgot the seasoning! Only had curry powder to hand, so followed this recipe and it was great! Thanks  -  18 May 2012


    Something else. I fried the peppers,tomato and sweetcorn first then added them into the pan with the chicken!I prefer pepper's cooked rather than raw!Taste nicer  -  05 Nov 2009


    These were too spicy for my liking and i even used 'mild' curry powder and 'cool' salsa,but they were still 2 spicy  -  05 Nov 2009
