Chicken and Chorizo Pizza

    My mum always made pizza with chorizo growing up and I loved it. I have redone it and added more protein - chicken! I love homemade pizza.

    Serves: 8 

    • 2 teaspoons olive oil
    • 2 skinless, boneless chicken breast fillets - cut into small chunks
    • flour for dusting
    • 1 recipe for a homemade pizza base
    • 250ml passata
    • 1 tablespoon olive oil
    • 5 cloves garlic, minced
    • 1 1/2 tablespoons dried Italian herbs
    • salt and ground black pepper to taste
    • 1/2 hot chorizo sausage - halved lengthways and sliced into thin half moons
    • 1/4 red onion, sliced thin
    • 4 tablespoons chopped jarred jalapenos
    • 125g grated mozzarella cheese
    • 100g grated Cheddar cheese
    • 2 tablespoons grated Parmesan cheese

    1. Preheat an oven to 220 C / Gas 7. Prepare a pizza tin with olive oil and flour.
    2. Heat 2 teaspoons olive oil in a frying pan over medium heat; cook the chicken in the hot oil until no longer pink in the centre and the juices run clear, 5 to 10 minutes. Set aside.
    3. Dust a flat working surface with flour. Roll the pizza dough out to the size of your pizza tin. Place dough on the prepared tin.
    4. Stir the passata, 1 tablespoon olive oil, garlic, Italian herbs, salt and pepper together in a small bowl; spread evenly over the surface of the dough. Scatter, in order, the chicken, chorizo, red onion, chopped jalapenos and cheese over the passata mixture.
    5. Bake in the preheated oven on the middle rack until the cheese is lightly browned, about 20 minutes. Switch the oven setting to grill and cook another 5 minutes.

    This was delicious! I used my own whole wheat crust and omitted the banana peppers because I had none - added a little chopped red bell pepper and a few mushrooms I needed to use up. The addition of chicken makes this a very hearty, meaty pizza, and I love that unmistakeable chourico flavor and the garlicky sauce.
