Bulgarian Chicken Soup (Ehniya)

    This is a filling, tasty chicken soup that I love to make.

    Serves: 6 

    • 2 tablespoons oil
    • 12 small onions, peeled and quartered
    • 4 or 5 chicken legs
    • Salt for taste
    • Cayenne pepper, to taste
    • Black pepper, to taste

    1. Heat the oil, add the chopped onions and fry till they are brown.
    2. Add the chicken and fry until lightly browned.
    3. Add enough water to cover the chicken and bring to the boil.
    4. Simmer for 1 hour, then season to taste with salt, cayenne and black pepper.

    This NOT how you make chicken soup in Bulgaria! There is no soup called Ehnia. There is this old fashioned stew called Yahniya but that’s not soup. Bulgarian chicken soup calls for chicken meat, carrots, potatoes, onions, red pepper, noodles or rice, and it is clouded with egg yokes mixed with lemon juice. At the end it is topped with some chopped parsley. Do not mislead people, please!  -  08 Nov 2017
