Baked slow cooker chicken

About this recipe: Baked chicken in a slow cooker for busy people! Put the chicken on in the morning, and have golden brown baked chicken for dinner.

'Cotton' Couch

Ingredients
Serves: 6 

  • 1 whole chicken
  • salt and pepper to taste
  • 1 teaspoon paprika

Method

  1. Take three pieces of aluminium foil and form into 8 to 10cm balls, and place them in the bottom of the slow cooker.
  2. Rinse the chicken, inside and out, under cold running water. Pat dry with kitchen roll. Season the chicken with the salt, pepper and paprika, and place in the slow cooker on top of the crushed aluminium foil balls.
  3. Set the slow cooker to High for 1 hour, then turn down to Low for about 8 to 10 hours, or until the chicken is no longer pink and the juices run clear.

I was a bit unsure when it didnt tell you to add any moisture but it worked out very well. The chicken was very moist, fell off the bone. The 2nd time I made it instead of the foil balls in the base I put a couple of carrots and an onion in the base and sat the chicken on them. Still didnt add any moisture. The veg added to the taste of the stock. Thanks for sharing! - 10 May 2011

Try putting the chicken breast side down on the vegetables to retain moisture in the breast meat. - 18 Oct 2011

Made it healthier. Remove the skin then cook as directed for a healthier option. Add a little water or chicken stock to kick start the steaming process. Wine works well too :-) - 12 Aug 2010
