Herring 'In a Coat'

This is traditional Russian salad with herring, beetroot, onion and potatoes. Served cold as a starter or a side dish when you are having spirit drinks, like vodka.

Ingredients

2 medium marinated herring fillets (i prefer the ones vacuum sealed in plastic, instead of marinated in vinegar in a jar)
1 small onion
4 medium potatoes, boiled
4 medium beetroots, boiled (can buy these in a pack ready boiled in supermarkets)
mayonnaise to taste

Preparation method

1. Cut herring into small pieces and layout in the salad bowl.
2. Chop onion finely and layout on top of herring.
3. Grate boiled potatoes, season with mayonnaise, and layout on top of onion.
4. Grate boiled beetroot, season with mayonnaise and layout on top of potatoes.
