Red wine oxtail

    Perfect for slow cooker. Trim fat from oxtail before cooking, otherwise the meal will end up swimming in fat!

    Serves: 6 

    • 1 oxtail
    • 500g beef stewing meat
    • 1 large onion
    • 1 large potato
    • 2 tbsp tomato puree
    • 1 x 400g tin chopped tomatoes
    • 200ml red wine
    • 8 tbsp gravy granules (plain flour can be substituted)
    • 1 tsp black pepper

    Prep:15min  ›  Cook:8hr  ›  Ready in:8hr15min 

    1. Put meat and oxtail in plastic container with gravy granules. Shake well to coat.
    2. Dice onion and potato.
    3. Place all ingredients in slow cooker and barely cover with cold water.
    4. Cook on high for 6 hours, or low for 8 hours.
    5. Serve with crusty bread.

    This is my favourite stew by far! I always add a couple of parsnips and carrots and brown the meat first. Very yummy.  -  21 May 2012
