Garlic roast pork in the slow cooker

    This is an easy pork, garlic and sweet potato dish made in the slow cooker. Even my kids like it!

    Serves: 4 

    • 1 tablespoon vegetable oil
    • 1 (900g) boneless pork roasting joint
    • salt and pepper to taste
    • 4 sweet potatoes, quartered
    • 1 onion, quartered
    • 6 cloves garlic
    • 400ml chicken stock

    1. Heat oil in large heavy frying pan. Season meat with salt and pepper, and brown in oil.
    2. In a slow cooker, layer sweet potatoes, onion and garlic. Place browned roast on top of vegetables, and pour in chicken stock.
    3. Cover, and cook on low setting for 6 hours.

    Gorgeous, used regular potatoes and added some shredded cabbage and was left with a moist and flavoursome meal  -  30 Sep 2011
